Camino Verde is a centralized fermentary in Ecuador that helps local farmers in a symbiotic relationship. Because of the fermentary’s previous experience running a cacao farm they’re able to provide advice and guidance on growing the best cacao. Once the cacao gets to the fermentary, the owner, Vicente Norero, uses his years of experience in microbiology to assist with his approach to fermentation. What we get are beautiful beans to work with.
