67% NORI NORI NORI

This bar features locally foraged nori from the Sonoma coast. It's a true celebration of nori as it's blended into the chocolate, there's nori brittle throughout, and then the bar is finished with nori sea salt.

Nori provides a delicate flavor and when working on this bar I tried to come up with CA coastal combinations or pairing it with sesame seeds like it often is but I decided in the end that I wanted the bar to celebrate the local nori so I'm highlighting it by integrating it into the bar in several different ways, pairing with the chocolate providing the perfect ocean balance.
