About J. Street Chocolate

Hi, I’m Julia Street aka J. Street. I showcase cacao on its own and paired with fermented ingredients and by-products of food production (aka food waste). I start with carefully sourced beans, craft every step by hand, have fun, play with flavor, and save food from waste to show you how amazing chocolate truly is.

Fermentation is my passion and chocolate is one of the most amazing fermented foods out there (if you ask me!). While the cacao beans are best fermented where they’re produced, I love to pair them with other amazing fermented flavors that I make myself. Chocolate is amazing on its own and when using high quality cacao, you can really taste the nuances between origin, due to fermentation and roast profile. I frequently use fermented additions to bring out more robust or umami flavors. I hope you’ll enjoy trying some of these unique combinations.

Cacao is an amazing fruit and you may already be enthralled by it, but only are you really aware after you’ve had carefully sourced cacao that doesn’t need to be masked by tons of sugar and additives. I source my cacao from Meridian Cacao who has built direct and ethical relationships with cacao producers around the world, carefully paying attention to the quality of the bean and fermentation and in return paying workers a living wage. I do every step of the chocolate making process myself by hand from roasting to putting the finishing touches on the packaging. Buying small means you’re supporting every part of this chain.
