66% MISO CHOCOLATE
Partnering with Shared Cultures, I added their cacao nib miso to the chocolate to enhance the flavor. It’s a younger miso, in order to create a sweeter one. The miso is dehydrated and added to the melanger with the beans and sugar. The miso brings out more flavor in the beans and this bar has a luscious mouthfeel. Tasting notes of salted caramel, cream, and dried plum.
