When presented with upcycled mint from INNA I naturally thought of a mint chocolate bar, but also thought about how I could make it more than a mint chip bar. That's where the shiso from our garden came in. This bar is a blend of cacao beans paired with dehydrated upcycled mint and local shiso and finished with cacao nibs. It provides a nice refreshing crunch and is a fun play on the classic mint chip ice cream in chocolate bar form.
